* I have to just update this post because of a joke my husband told me last night

Get it? Cardamom Bacon!
Anyways…. Brown Sugar + Crispy Bacon = True Love.
But seriously, these flavors should get married. Okay, maybe not everyone would think so, but to me, breakfast food doesn’t get any better than this!
And don’t even get me started on the smell of this stuff baking. Lets just say, brown sugar bacon cooking in the oven is what breakfast SHOULD smell like. mmmmm…..Its the kind of smell that makes you want to get up in the morning.
We were introduced to this stuff by Brad’s Aunt Becky. I’m not sure If I have posted about her before, but to make a long story short, Aunt Becky is about to buy a Bed and Breakfast (a.k.a. Breakfast will be her job!) and lets just say, they are going to be super successful because anything Becky touches in the kitchen automatically turns to food gold. Is there a word for “green thumb” but for cooks? If there is, then she has it! Maybe we should call it, “A golden whisk”. But seriously, she has it.
And learn from my mistake. The first time we made this, the smell was so awesome, but quickly turned to a “burnt aroma’ because we over baked it. After crying a little, and conferring with the “Golden Whisk” girl (a.k.a. Aunt Becky) , she said you have to really watch anything covered with sugar because it can burn so easily! To make a long story short, the second time we made this we watched more carefully, and were rewarded by this sweet and salty perfect, candied bacon.
Brown Sugar Cardamom (or Cinnamon) Bacon
*You have to watch this bacon carefully towards the end of its cooking time. It can go from perfect to burnt so quick! Make sure its crispy, but not over done. Also, you can add cardamom or cinnamon, or just leave both of those out. It will taste great no matter what!
1 lb. thick-sliced lean bacon
1/2 cup firmly packed light brown sugar
1/2 tsp. freshly ground cardamom (or cinnamon)
1/2 tsp. freshly ground pepper
Preheat oven to 350°F. Line the bottom and sides of rimmed baking sheet with aluminum foil.
Arrange the bacon slices in a single layer on the prepared pan. In a small bowl, stir together the brown sugar, cardamom (or cinnamon) and pepper. Sprinkle the mixture evenly over the bacon slices.
Place 1 pan on the upper rack and the other pan on the lower rack. Bake the bacon, without turning, for 25-35 minutes. Watch carefully especially towards the end of hte cooking time. Using tongs, lift the bacon slices from the pans, gently shaking off the excess drippings, and transfer them to plate.
Arrange the bacon on a warmed platter and serve immediately.
