Do you ever wake up in the morning and wish you had an awesome breakfast already ready waiting for you to eat? I do every day! Well this breakfast is the answer to your prayers, and mine:)! You make it the night before so all you have to do is pop it in the oven. And voila…this beauty will be yours.
As a married couple I feel like traditions aren’t just something you can state, they are something that come over time after trial and error, and figuring what works best for each family . Brad and I recently started one that I LOVE though! Every Saturday morning after we wake up we do some kind of family work out, whether its a 3 mile run (pushing the kids in the jogger, and letting letting Lucy get out and run the last 400 meters) , a swim, or a quick tennis game, and then we come home and have an awesome breakfast. I love this for lots of reasons but mainly because, 1. when we are working out there is usually no distractions. Its just us time! 2. We are getting great exercise and we feel productive (even if we don’t do anything else that day:)). 3. I love bonding over yummy food when we get home. There is something about eating good food together that can’t be replaced by anything else! and 4. It gets me trying new breakfast recipes. I usually stick to cold cereal or eggs during the week because the mornings can be rushed, but its fun to know that on Saturday we are going to have something with a little more love and effort in it.
And let me just say that this Apple Creme Brulee Baked French toast has landed on the table many a times after our Saturday morning work outs. It’s awesome. It tastes just like what I imagine Creme Brulee should taste like, even though I don’t think I’ve ever tasted a real Creme Brulee, And the apples on top are to die for! My daughter just eats the apples. I also love it because, minus the french bread, I usually have all the ingredients on hand (eggs, brown sugar, butter, orange juice). Mmmmm…just talking about this is making me wish I was eating this now!
Apple Creme Brulee Baked French Toast (Mothers day brunch idea #2)
1 stick of butter (8 tablespoons)
1 cup of brown sugar
2 tablespoons corn syrup
1 loaf of french bread (cut into slices and then into 1 inch squares)
1 1/2 cups of milk
’1 teaspoon vanilla
2 tablespoons orange juice
1/4 teaspoon salt
2 apples, sliced into thin slices.
topping for apples:
1 to 2 tablespoons of cinnamon and sugar (mix ratio of cinnamon and sugar to your liking!)
In a small sauce pan melt butter and add brown sugar and corn syrup, stirring over moderate heat until smooth and pour into a 9X13 dish.
Place the cubes of bread in a mixing bowl.
In a medium size bowl whisk together the eggs, milk,vanilla, orange juice, and salt until smooth and pour evenly over bread cubes. Stir until all the bread is damp. Pour bread mixture into the 9X13 dish on top of the brown sugar mixture.
Place the apples on top of the bread mixture in rows. Sprinkle the top of apples with desired amount of cinnamon and sugar. Chill apple topped bread mixture covered in the fridge for at least 8 hours (overnight) or up to 24 hours.
In the morning heat oven to 350 degrees. Set the dish out to warm up slightly while the oven heats up. Bake uncovered until puffed and edges are golden (about 40 minutes). Serve immediately.
