I have been known to eat this salad for dinner, lunch, and yes… you guessed it…breakfast. My husband will wake up, walk into the kitchen, look at my plate which I am trying to nonchalantly eat like its no big deal and my husband will smile at me and say, “ohh… salad for breakfast again, huh?”. And its true. But can you blame me? It is really that kind of good! The berries are beautiful and the candied almonds add the perfect crunchiness…not quite as good the second day, but not bad. Not to mention its good for you!
This salad is really no secret. We have all had it in one form or another, but I some how forgot until recently a.) how much I like it b.) how perfect it is for summer (berries are going on sale all over the place around here) and c.) how my 2 and a half year old daughter will actually keep spinach on her plate when its combined with berries and the candied almonds. This salad paired with poppy seed dressing, or some other sweet dressing could quite possibly win an award for the best tasting salad, and the best part is its so easy!

Easy Berry Spinach Summer Salad with Candied Almonds
Ingredients for stove top candied almonds:
1/2 cup almonds
1 heaping tablespoon white sugar
Ingredients for salad:
1 9oz bag of spinach
strawberries(and whatever berry you have on hand. In this picture we had blackberries also so we threw them in)
1/2 cup candied almonds
Directions for Candied almonds:
In a small saucepan add the almonds and the sugar. Turn stove on high. Stir constantly until sugar liquifies and the nuts start to smell fragrant. Take off stove and let cool.
Directions for the salad:
Put spinach in a bowl. Top with berries and nuts. Serve with a poppy seed or sweet dressing on the side. Enjoy!
